The C of I to participate in Eat Local Challenge 9/29

CALDWELL – For the 5th year in a row, Bon Appétit Management Co., will participate in the Eat Local Challenge on Sept. 29. The Eat Local Challenge asks chefs to prepare several dishes made from locally produced ingredients.
At The C of I, executive chef Jered Couch will highlight southwest Idaho's best from local purveyors such as Lazy Dog Gardens, Canyon Bounty Farms, Ballard Family Farm and M&M Heath Farms.
Simplot Dining Hall will be open to the public from 11 a.m.-1:30 p.m. Cost for lunch is $7 per person plus tax.
"Since coming to Bon Appétit at The College of Idaho in July, I've been looking forward to my first Eat Local Challenge," Couch said. "While I source locally all year round, this one-day celebration is a culmination of so many of Bon Appétit's positive impacts including nourishing people, local economies, and the planet through the food we prepare."
Menu items include: carved local whole chicken served with mashed fingerling potatoes and vegetables, eggplant parmesan, pepper roasted Caribbean pork loin with black beans and grilled peaches, Philly cheese steak sandwich, Bon Appétit veggie burger, flat breads in the deli with local accompaniments like black bean falafel, finger steaks with hand cut fries, duck egg quiche, tomato-basil soup and Walla Walla onion soup.
Bon Appétit Management Co. runs the food service at The C of I and 400 college restaurants and cafes.
